Jingisukan

Jingisukan is one of the most popular grilled lamb dishes we offer at Calistoga Grill. This dish is usually served with sliced meat, which can be plain or marinated, and then grilled along with various vegetables such as onions, cabbage, leeks, or peppers.

Ingredients:

  • 400g lamb loin, thinly sliced
  • 1 onion, thinly sliced
  • 1 carrot, thinly sliced
  • 100g moyashi mung bean sprouts
  • ½ tbsp vegetable oil

For marinade:

  • 1/2 onion
  • 1/2 apple, peeled and cored
  • 1 clove garlic
  • 20g fresh ginger root, peeled
  • 5 tbsp soy sauce
  • 2 tbsp cooking sake
  • 2 tbsp orange juice
  • 1 tbsp sugar
  • 1/4 tsp pepper

Katsudon

Katsudon is a popular rice dish served in a bowl topped with meaty ingredients. It is usually topped with tonkatsu (a deep-fried and crumbed pork cutlet) where it is simmered together with vegetables in a seasoned sauce bound with eggs.

Ingredients

  • 2 center-cut boneless pork chops
  • salt and pepper
  • flour (for dusting)
  • 1 egg
  • 1 cup panko
  • oil (for frying)
  • 1/2 cup dashi stock or chicken stock
  • 2 teaspoons sugar
  • 1 tablespoon soy sauce
  • 2 teaspoons Mirin
  • 2 large eggs
  • 1 medium onion (thinly sliced)
  • 2 servings steamed white rice
  • 1 scallion (chopped)

Oyakodon 

Oyakodon is one of the dishes which are perfect for any occasion. This delectable meal consists of a rice bowl that is topped with chicken, eggs, and chopped scallions. Additionally, the eggs are poured over the rice before they have completely cooked to enhance the flavours further.

Ingredients

  • 2 boneless, skinless chicken thighs
  • ½ onion (3 oz, 85 g)
  • 2 large eggs

Seasonings:

  • ½ cup dashi
  • 1 ½ Tbsp mirin
  • 1 ½ Tbsp sake
  • 1 ½ Tbsp soy sauce
  • 1 ½ tsp sugar

Negima

Negima is a delectable meat dish that consists of sliced chicken thighs or chicken breasts that are skewered together with pieces of green or Welsh onions (negi). It is typically seasoned with salt (shio), or a thick and sweet soy sauce for additional taste. Mooever, the ingredients are then placed on bamboo skewers and grilled over charcoal on traditional yakitori grills. 

Ingredients

For skewers:

  • 2 chicken breasts (it must be  cut into about 3/4 inch pieces)
  • 1 scallion or green onion (negi) (it must be cut into about 3/4 inch pieces)
  • Bamboo skewers
  • Water for soaking the skewers

For Yakitori sauce (tare)

  • 5 tablespoons soy sauce
  • 5 tablespoons mirin​
  • 3 tablespoons cooking sake
  • 1 1/2 to 2 tablespoons granulated sugar
  • 1 slice of ginger (it is only optional)

Marinating doesn’t just give flavour to the dish but it also reduces the number of AGEs by up to half. The American Institute of Cancer Research recommends people to marinate their barbecue in an acidic mix with vinegar or lemon to reduce the presence of dangerous compounds.

A number of herbs can spice up your meal as well as make it healthy. One study found that spices like rosemary can reduce the HCA levels of the meat thereby taking away the risks of getting cancer. Most of the herbs used in cooking contain high levels of antioxidants which are proven effective in preventing cancer.
