Even though steak is a simple dish that requires only a bit of seasoning and some minutes of cooking, there are many factors to consider when choosing which cut is the best one. With that, we will discuss the factors that you should consider in a steak and which are the best cuts to buy.

  • Tenderness

Tender steaks are easy to chew and the simplest way to achieve that is to use a tender cut of beef. The most tender parts of steaks are those that have little connective tissue and finely marbled fat and are cut around the backbone. 

  • Fat

Fat is the main flavour component in steak since flavour molecules are repelled by water, but they dissolve in fat. Also, fat adds to the juiciness of the steak.

  • Ageing

Ageing is the process by which enzymes act on the meat to break down its connective tissue and increase tenderness and flavour. In the old dry-ageing process, steaks are hung for about 30 days to intensify their flavour. 

Most beef is wet-aged by way of vacuum sealing in plastic bags. The process not only helps in keeping the meat fresh for a longer period but also reduces the loss of water which is preferred by vendors since steak is sold by weight.

Ribeye represents the best choice for those who focus on the flavour above anything else since it has marbled fat and a high degree of tenderness.

  • Tenderloin

Since tenderloin is leaner than ribeye, this cut is perfect for those who prefer texture over flavour. It is often wrapped in bacon or served with a sauce to improve the flavour.

  • Strip steak

This cut is also known as the New York Strip and Kansas City Strip. Its marbling gives it a great flavour, making it the perfect part to use for making tasty roast beef.

  • T-Bone

T-bone steak is named for the shaped bone which holds it together. T-bones are fairly large cuts and costly so it is best shared among friends or family members.
