  • There are compounds formed in your meat as it is cooked which is the HCAs (heterocyclic amines) and PAHs (polycyclic aromatic hydrocarbons). These two are formed whenever meat is cooked. However, it increases dramatically as the temperature increases. Large doses of these compounds are found to be carcinogenic for animals. There is no research if this is the same case for humans, but you can never be too safe. 
  • According to food frequency surveys, people who always consume grilled meats have a higher risk of developing cancer in pancreas, colon, and even bladder. 

How to minimize the risks of grilling

With all that risk, is it still possible to enjoy your favourite grilled dish? Luckily, the answer is yes! You can easily minimize the negative effect of grilling by following the tips below: 

  1. Marinate!

Marinating doesn’t just give flavour to the dish but it also reduces the number of AGEs by up to half. The American Institute of Cancer Research recommends people to marinate their barbecue in an acidic mix with vinegar or lemon to reduce the presence of dangerous compounds. 

  1. Spice it up with herbs

A number of herbs can spice up your meal as well as make it healthy. One study found that spices like rosemary can reduce the HCA levels of the meat thereby taking away the risks of getting cancer. Most of the herbs used in cooking contain high levels of antioxidants which are proven effective in preventing cancer.

  1. Pick your protein
